okay so I've been terrified of making biryani at home for literally years. it always felt like one of those things that needed a whole weekend, a very experienced aunty supervising, and about 27 individual spices I'd never find at my local shop.
then I stumbled on Maunika Gowardhan's Easy Chicken Biryani from her Cook in a Curry blog and honestly??? I was eating a proper fragrant, layered biryani on a random Tuesday night and my flatmate thought I'd ordered in.
what actually got me was how she structures it: marinate the chicken in greek yoghurt, turmeric and chilli powder first (even just 20 minutes works, though overnight is next-level), then cook everything in one heavy-bottom pan before layering with pre-cooked basmati. no separate dum vessel needed. no pressure cooker panic. just a lid and a low flame.
the saffron milk layered between the rice is non-negotiable though â it gives you those gorgeous golden streaks and the aroma when you lift the lid after that final 5-minute steam is honestly unreal. the garam masala, fresh mint and coriander on top do so much work too.
I used leftover rice from the night before which she specifically says is great for this recipe, and it worked perfectly. the whole thing came together in under an hour including the marinating time.
if you've been putting off trying biryani because it feels too complex, this is genuinely the recipe to start with. Maunika originally made this on Jamie Oliver's Food Tube for National Curry Week and you can feel how much thought went into keeping it accessible without sacrificing any of the flavour.
