Vegie Bar cont. Looking around the restaurant, most people seemed to be ordering the burrito and for good reason too. It was a large meal, typical of Vegie Bar. Filled with red kidney beans made it high in virtually fat-free protein, rich in cholesterol lowering fibre (like most beans) with high levels of iron, magnesium, phosphorous and vitamin b9! Be sure to pre-soak your kidney beans because it has been found to reduce the sugars associated with causing flatulence! You can either boil the beans for 2 mins and let it stand for 2 hours or soak for 8 hours/overnight in the fridge. Rinse again before cooking. Mmm beans!
Restaurant idea #2 Vegie Bar - 380 Brunswick st Fitzroy This gem is notorious amongst the health conscious and those who like a fresh, wholesome feed. The ambiance. Let's be honest, there isn't any. It's loud, chaotic and wow, they have a fireplace! The ginger ninja cocktail hit the spot, refreshing with just the perfect amount of ginger. The coffee was warm but I don't mind - it means I can drink it quicker. Rice balls for entree, not as good as Las Vegan. Crackers and dip as pictured... nice and mediocre. Stay tuned for the mains!
Stuffed capsicum and steamed veggies. Try organic brown rice and legumes such as chickpeas and lentils in your veggies instead of meat. Fry some leeks and garlic, add some tomatoes or your favourite pasta sauce and mix with your filling. Bang it in the oven and Bob's your Uncle.

Chia Pudding with Bonsoy (the best soy milk in my opinion), cinnamon and trail mix. Try it with warm milk, it's perfect for a dreary morning like this one!
Restaurant Idea #1 Las Vegan - 22 Smith St Melbourne. Vegan Satay Rice Balls. If you like food in spherical shapes, give these a go. They also do a great vegan eggplant parmigiana and quesadilla!
Chia Pudding topped with passionfruit and trail mix (cashews, pepitas, sunflower seeds, cranberries, goji berries and inca berries). Chia pudding is so easy to make and requires no cooking! Just add one part chia seeds to two parts liquid which can be anything you like. Try adding milks such as almond, hazelnut, coconut, rice, soy or even juices like apple, pear and grape. I tried orange juice once but it didn't really tickle my fancy. It's important that you add enough liquid otherwise halfway through your pudding you'll find crispy-half soaked chia seeds. You could also add some cocoa power for a delicious chocolatey taste, some honey for sweetness and spices such as cinnamon and nutmeg. Let it sit for thirty mins to an hour, add your toppings and enjoy! In the photo, I simply used distilled water with a few spices (no cayenne this time!). This is a really great dish to experiment with so think of the flavours you like and add them to your chia pudding! Enjoy! DID YOU KNOW: 1 tablespoon of chia seeds has more calcium than a glass of milk, more omega-3s than salmon and more antioxidants than blueberries? (Says the Internet).

I made this one in the blender which means I'll get my fiber and my body will assimilate many more nutrients from the blended greens rather than if I chewed them. Chlorophyll provides the green colour that is found in grasses, leaves, and many of the vegetables that we eat. It enhances oxygen transport in your body and is a top nutrient for balancing your body's pH by helping to reduce acidity, so it’s great for detoxing and making your body more alkaline! Veggies that contain chlorophyll include asparagus, bell peppers, broccoli, brussel sprouts, green cabbage, celery, collard greens, green beans, green peas, kale, leeks, green olives, parsley, romaine lettuce, sea vegetables, spinach, Swiss chard, turnip greens and so many more!
