Unfortunately the answer is no on both counts LOL. I'm sorry! I'm aiming for a posting schedule of 1-2 chapters a week (depending on the work load of my beta buns). Please join me in cheering them on!
The whole fic stands at (currently) just over 110k words. We are slightly over half-way into the story, with one more arc to go. As for chapters, I'm very sorry again. I'm taking more of a jannik "let's see what's coming" with sectioning off the next Part for chapters. Once I do, I'll update the chapter count on ao3.

That is a very good question!! As of ch. 12 of ice and fire, we are somewhere along 10-11 months since Jannik's last day in King's Landing. There will be another time marker in (checks notes) two chapters time, but assume that any "lul" period small comes with a few weeks worth of time jump.
I'll lay out the timeline below as of ch. 12. Spoilers to ch. 12 ahead.
Timeline from when Carlos arrived in Winterfell (yr - years, m - months, w - weeks):
(0 ) - 1 year betrothal countdown starts when Carlos arrives at Winterfell
(11 m + ~2 w) - start of Part II - travelling to King's Landing begins. Travel takes roughly 3 weeks.
(1 yr) - on the road to King's Landing
(1 yr + 1 w) - arrive at King's Landing.
(1 yr + 5 m) - they spend approx. 4 months and in King's Landing before the end of Part II and goodbye Carlitos happens.
(1 yr + 5 m + ~2 w) - Part III begins. Jannik grieves. They take a few weeks to travel to Winterfell.
(1 yr + ~7 m) - Hanspeter comes back to Winterfell a few weeks later than Jannik. Carlos has been gone for 2 months.
(1 yr + 8-9 m) - at some point Jannik's breakdown scene happens.
(2 yr) - Jannik & co. spends a 3-4 months visiting the territories around the North. At the end of the 2 year mark, is the scene at Oldcastle with Darren, marking the end of Darren interlude. Carlos has been gone for 7 months.
(2 yr + 1 m) - They begin to march for Riverrun. (I gave them a month or so & begin marching. I'm not sure how realistic this is for that number of people.). Carlos has been gone for 8 months.
(2 yr + 2 m) - Siege of Riverrun is lifted. Carlos has been gone for 9 months.
(2 yr + 3-4 m+) - Chapter 12's down period. Jannik meets Meddy begins helping Matteo retake the Riverlands. Carlos has been gone for 10 - 11 months.
If it seems like the time skip is ramping up, there is a plot related reason for that which the readers will find out as we move along the story. I also wanted to give ample time for people to travel around Westeros similar to the earlier seasons of the show and books. Moving a big group of people will only add more time to this as well due to the logistical nightmare. Then, I wanted to give them time in the locations where the action is happening as well. So they can savour (or suffer) in the mundaneness of things.
All this to say that I'm relying on a lot of the reader's goodwill and grey areas for the timeline of the story. Jannik and Carlos had one year and almost four months of joy though. Rest assured readers for our sweet worker beelitos, Winterfell really was the best vacation Carlos ever had.
