These vegan sweet potato quinoa patties taste great and are good for you. They taste great and fill you up as a snack or meal.
Ingredients: 1 cup cooked quinoa. 1 cup mashed sweet potatoes. 1/4 cup finely chopped onion. 1/4 cup finely chopped bell pepper. 2 cloves garlic, minced. 1/4 cup breadcrumbs. 2 tablespoons nutritional yeast. 1 tablespoon soy sauce. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil, for cooking.
Instructions: Put cooked quinoa, mashed sweet potatoes, onion, bell pepper, garlic, breadcrumbs, nutritional yeast, soy sauce, cumin, paprika, salt, and pepper in a large bowl. Mix the ingredients together well until they are spread out evenly. Make patties out of the mixture that are the size and thickness you want. Set a pan on medium heat and add the olive oil. For 3 to 4 minutes on each side, or until golden brown and crispy, remove from heat. Take them out of the pan and put them on a plate lined with paper towels to drain. For a burger, serve it hot with your favorite dipping sauce. Have fun!
