I brought my work home and was able to whip up some delicious tofu tacos in less than 10 minutes at home, giving me more time to spend working (and leftovers for lunch at Salesforce tomorrow!) Thanks Gobble!

Sorry, boys, but his meal from @gobbleinc was too yummy to share! Today's meal was chimichurri salmon with broccolini and saffron rice. The chimichurri sauce was sharp and zesty with just the right amount of spice. Perfect light meal for this cool summer evening.

Tried @gobbleinc@gobblegrams this week for the first time with a voucher from @groupon . Not bad. This was the brown sugar crusted salmon. Problem was, they forgot the brown sugar spice mix. 😱😱😱 I made my own and hoped for the best! I think I did a good job of figuring it out. Brown sugar, some chili lime spice from @traderjoes , and hot Hungarian paprika. Had to toss a couple weird parts of the cucumber as it had frozen in the box, and a couple tomatoes for the same reason. Other than that, fish was firm and fresh, and everything wasn’t overly salty. Had to make this today or the avocado would have been ruined. Still a @hellofresh fan, so Gobble will have to be amazing the rest of the week to sway my vote.

Made a Mediterranean shrimp dish with garbanzo beans, pita chips, onion, cucumber, salsa, and spices from a @gobbleinc meal! Mmmm it was delish!

Chimichurri Fish Tacos with Cilantro Hummus & South American Slaw What a wonderful lunch! We really enjoyed these and they were a snap to make! The barramundi filets were big and beautiful. These tacos were stuffed to the max! I didn’t fry the tortillas in oil as instructed in the recipe but instead sprayed them with olive oil cooking spray and toasted them in the skillet that way. The tortillas were then spread with a cilantro hummus. The hummus came plain and all you had to do was simply mix in the cilantro pesto. The slaw was awesome! It had green onions mixed in with It which I thought was great (love green onions). The slaw was tossed with a chimichurri sauce. There was a lot of it so we didn’t use it all. I saved the leftovers for something else. The fish was coated in flour that was seasoned with cumin and paprika. It was then pan fried until cooked through. The two tacos were plenty for myself but hubby could have eaten a bit more. We rated this one a 9 but would easily have been a 10 if it came with a side for a slightly more filling meal. 9/10
