VEGAN PUMPKIN CINNAMON ROLLS

Ingredients:
- 1 packet instant yeast (~2 Âź tsp) - 1 cup unsweetened almond milk - 6 ½ Tbsp vegan butter (such as Earth Balance), divided - Âź tsp sea salt - 1/3 cup + 1 Tbsp + 1 Tbsp organic cane sugar, divided - 1/3 cup pumpkin puree - 2 ž - 3 Âź cups Bobâs Red Mill Unbleached All Purpose Flour - ½ tsp + 1 Tbsp cinnamon, divided - 1 tsp + ½ tsp pumpkin pie spice, divided - ½ cup + 1 Tbsp pumpkin butter (see notes) - OPTIONAL: ž cup raw pecans, chopped
Instructions:
In a large mixing bowl in the microwave (or in a small sauce pan over medium heat), heat the almond milk and 2 Tbsp vegan butter in 30 second increments until warm and melted, never reaching boiling. Remove from microwave (or stovetop) and let cool to 110 degrees, or the temperature of bath water.
It should be warm but not too hot or it will kill the yeast. If warmed on the stovetop, transfer mixture to a large mixing bowl at this point.
Sprinkle on yeast. Let activate for 10 minutes, then add 1 Tbsp sugar, Ÿ tsp salt, ½ tsp cinnamon, and 1 tsp pumpkin pie spice and stir. Let it set for a a few minutes, then whisk in pumpkin puree.
Next add in flour ½ cup at a time, stirring as you go. The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball, adding flour as needed.
Rinse your mixing bowl out, coat it with canola or grape seed oil, and add your dough ball back in and roll it around to coat. Cover with plastic wrap and set in a warm place to rise for about 45 minutes - 1 hour, or until doubled in size.
On a lightly floured surface, roll out the dough into a thin rectangle. Brush with 2.5 Tbsp melted vegan butter and ½ cup pumpkin butter. Then top with 1/3 cup sugar, 1 Tbsp cinnamon, ½ tsp pumpkin pie spice, and ž of the pecans (optional).
Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife or floss, cut the dough into 1.5 - 2 inch sections and position in a well-buttered 8x8 square or comparable sized round pan (you should have about 10 rolls).
Brush with remaining 2 Tbsp melted vegan butter mixed with 1 Tbsp pumpkin butter (optional), sprinkle with 1 Tbsp cane sugar and remaining pecans, and cover with plastic wrap. Set on top of the oven to let rise again while you preheat oven to 350 degrees F.
Once the oven is hot, bake rolls for 30-40 minutes or until golden brown and crusty on the tops. Let cool for at least 10 minutes before serving.
Add a Tbsp of pumpkin butter and/or a dash of pumpkin pie spice to add more pumpkin flavor.
Cinnamon rolls should keep covered at room temp for up to a few days, though best when fresh.

Notes: *For a simple dairy free glaze, melt 1 Tbsp vegan butter and whisk in 2 - 2 ½ cups powdered sugar. Mix and gradually thin with dairy-free milk 1 tsp at a time until pourable but still thick. Add 1 Tbsp pumpkin butter and/or Ÿ tsp pumpkin pie spice for more pumpkin flavor.
*Pumpkin butter can either be purchased at the store or made at home - I love this recipe from Oh She Glows. If you go the store bought route, just check to make sure theyâre vegan friendly!

The glaze is optional and customizable. Iâve included a couple options below, but my personal favorite is a simple powdered sugar glaze as it suits the spiciness of the pumpkin flavor perfectly.

2 cups brewed chamoille tea (I use this honey & vanilla one) 1 sweet apple, chopped ½ teaspoon cinnamon 1 cup almond milk 1 tablespoon honey Directions
Bring the cinnamon, milk and honey to a simmer in a small sauce pan over medium heat.
In a blender, combine the brewed tea and the apple. Blend until smooth.
Pour the tea and apple mixture into 2 mugs and top with the milk mixture from the sauce pan.
Garnish with cinnamon.

Why doesnât anyone make cinnamon rolls? Theyâre complicated, difficult and time consuming. Thatâs why.
But these cinnamon rolls are different:
- 7 ingredients - No complex steps - No difficult methods - Practically fool proof - Just straight forward, fluffy, gooey goodness in cinnamon roll form.
Oh yeah, and theyâre vegan. Holy frigginâ delicious.
they turned out JUST AS DELICIOUS as bakery fresh cinnamon rolls. This, my friends, is my new go-to cinnamon roll recipe and it just so happens to require 7 ingredients and one lazy morningâs preparation. Behold, the Worldâs Easiest Cinnamon Rolls
Although a glaze isnât really necessary or within the 7 ingredient limit, itâs an easy last minute addition that will send them over the top. In other words, highly recommended for pure cinnamon roll bliss.
Prep time: 1 hour 30 mins
Cook time: 25 mins
Total time: 1 hour 55 mins
Ingredients: 1 packet instant (or rapid rise) yeast* (2 Ÿ tsp) 1 cup (240 ml) unsweetened plain almond milk ½ cup (112 g) Earth balance (vegan butter), divided Ÿ tsp salt 3 cups (408 g) unbleached all purpose flour* 1 ½ tsp ground cinnamon Ÿ cup + 1 Tbsp (63 g) organic cane sugar, divided*
Instructions: In a large sauce pan (or in a bowl in the microwave at 30 sec increments), heat the almond milk and 3 Tbsp Earth Balance until warm and melted, never reaching boiling.
Remove from heat and let cool to 110 degrees F (43 C), or the temperature of bath water. It should be warm but not too hot or it will kill the yeast.
Transfer mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes, then add 1 Tbsp sugar and the salt and stir.
Next add in flour ½ cup (68 g) at a time, stirring as you go.
The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball.
Rinse your mixing bowl out, coat it with canola or grapeseed oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size.
On a lightly floured surface, roll out the dough into a thin rectangle. Brush with 3 Tbsp melted Earth Balance and top with Ÿ cup sugar and ½ - 1 Tbsp cinnamon (to taste).
Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife or a string of floss, cut the dough into 1.5 - 2 inch sections and position in a well-buttered 8x8-inch square or comparable sized round pan (you should have about 10 rolls).
Brush with remaining 2 Tbsp Earth Balance (melted) and cover with plastic wrap. Set on top of the oven to let rise again while you preheat oven to 350 degrees F (176 C).
Once the oven is hot, bake rolls for 25-30 minutes or until slightly golden brown. Let cool for a few minutes and then serve immediately.
Optional: Frost with dairy free cream cheese frosting or a simple mixture of 1 cup (112 g) organic powdered sugar and 1-2 Tbsp (15-30 ml) almond milk.
Notes: * You can use regular yeast, but it will require more time to let them rise properly.
* I have not tried making this recipe gluten free, however, many of you have had success with a blend of spelt flour or whole wheat pastry. But for classic, fluffy cinnamon rolls, I recommend unbleached all purpose.
* I have not tested this recipe with other sweeteners, but it may work! Let me know in the comments if you have success.
