#CookingWithCA Out did myself tonight...really need to remember what the hell I did in order to recreate this dish š¬ So one of the things I love about cooking (besides eating the food) is the creativity involved: not every meal can be a masterpiece or a well thought out and planned culinary event. Many times you have to make due with what you got. I had some chicken breast defrosted so I had to cook it-I HATE chicken breast because it's so damn boring- so I decided to quickly marinate the meat (white wine, lemon juice, rosemary, thyme, sage, black pepper) and slow cook in a pan. Not sure how long I marinated or cooked it for but it came out tender, juicy and shredded easily. The flavor was really surprising, actually. The white wine reduced to create a sweet and charred exterior, yet still moist and succulent. Moral of the story- don't be afraid to make due with what you got and try something new. Enjoy

As a lifelong clean athlete, I am adamant that hard work pay off. Whatever your goal may be, short cuts are never the way to the finish. Set goals and work tirelessly till you achieve what you desire-It is important to understand that it's gonna hurt, you are going to sacrifice and that you are going to have doubt- that is all part of the process. Speaking of the process... I recently watched my infant nephew learn to crawl and to stand. To watch how difficult, stressful and straining it is day in and day out reminded me of what it takes to learn, grow and succeed. He would fall over, cry in frustration, get mad, grunt and strain and push until he eventual got to where we wanted to be. And the best part was as the little man actually did accomplish what he was trying to do- he didn't smile or celebrate, he just went right on working and trying to do more. INGREDIENTS: large bell peppers ground meat (turkey or beef) red onion tomato garlic barley egg salt pepper worchester sauce parsley shredded mozzarella INSTRUCTIONS: Cut tops off peppers and boil till tender Prepare barley as instructed SautƩ diced onions, garlic and peppers till soft Add ground meat, salt pepper, parsley and egg Add cooked barley, chopped tomatoes, worchester sauce Mix well and fill boiled peppers with combination Top with cheese and bake at 400 for 5 minutes #picplaypost
