I imagine Dexter while being switched with Daring would probably still not have Daring's skills in athletics and is still nerdy (if the switch doesn't effect that part) so he wouldn't really fit the archetype of a typical prince charming and on top of that I still remember from Darling's book a semi charming kind of life on how his parents, his dad in particular, was mortified that Dexter was suggested to wear glasses and had to bend over backwards just to justify on why he needed them. So just imagine being Dexter in this universe, you're being said to be destined to be the prince charming of a prominent royal family and yet you don't have the typical skills of the average charming prince that your brother (who in your universe is said to not really pay attention to his destiny) is more skilled then you even when he doesn't try and your little sister is being said by everyone as twice the prince as you are and on top of that you wear glasses that no other charmings in your family have to, oh yeah he's definitely having quite a hard time in his childhood here as well. And I could just imagining his self esteem and anxiety when he and his parents met the white family and how Raven's parents must've reacted when it's told on how he was their daughter's prince charming and that they probably immediately responded indignantly on how could he be chosen when his other siblings is more suited than him. But while he was drowning in anxiety and when he sees Raven he thinks she must've think lowly of him as well, in actuality it's the opposite

In this universe while being the next snow white I can't really imagine on Raven liking her mother as well here (if she's anything like Apple's mom) bcs of how it seems her acts of kindness was more like a facade and how she should protect her image despite how in the snow white's story yes she is beautiful and kind but those things are real and genuine not a corporate facade. So in the undoverse, this Raven I imagine would feel quite weighted on how her life is all perfectly planned acts and that nothing is genuine and she should just accept it, so when she's told she was about to meet her prince charming all she can't think about on how he probably playing a facade as well and was just steeling herself to accept it. But then to her surprise, he was nothing like she imagine but instead so plainly, authentic and real, and man how she was so happy about it.

Maybe Raven declared it Infront of their parents or maybe she pulled Dexter away to be alone with him but all in all it leads to Dexter rambling abit apologizing on her being destined with him and how he understands if she probably hate him to only be met with Raven giving him a warm smile saying "to me, you're the most charming of all" and maybe she also comment on how she thinks his glasses are cute and it's just her blushing a little while Dexter is as red as a tomato and they then just started talking about their interests and hobbies and just genuinely getting to know one another.

Basically the start and their present relationship when they went to ever after high was pretty much straight out of a fairy tale with mutual love at first sight. And man I just love the fluffiness of it all. Raven and Dexter being happy to have someone they can be their real self and accepts them for who they are and each thinks the other is amazing. Personal headcanon, but imagine that's where the turning point of Dexter's self esteem is where with Raven giving his some confidence she sorta make him more charming but not in the fight dragons kind but more like he became more chivalrous and pretty much be that type of guy that every girl dreams of. Kind, polite, respects you, would listen to you when you're sad or your fears, the who would always just bought a bouquet bcs they wanted to, opens the door and pull the seat for you, cheers and celebrates with you, remembers your favorite everything, compliments you every single day and when he sees you he just has this love lovestruck gaze that just spells of how much he loves you. Raven is also the same vice versa! With Dexter she starts to be more open and sure of herself and her beliefs that just made her probably the most fairest of the snow white's generation at the time bcs she has a heart that's just as fair as her looks and she's kind to everyone making her quite popular cause people were genuinely liking her and she'd probably would be more confident in expressing herself like where Raven in your redesign still darker more vibrant tones which I sorta thinking it's her way of rebelling abit on her parent's ways.

And yeah pretty much just a very sweet basis the relationship was based with in that universe

But also just imagining a heartfelt moment when things go back to the way they are and how their relationship goes (sorry but do they still have their memories?). Raven and Dexter would feel awkward at first but for different reasons. Raven felt awkward bcs well she's back to being the feared evil queen and now everyone scorns he again and while she is glad that things were back as they are, she's still sadden cause she still remembers on how nice it was to being liked and how she felt like Dexter with their original circumstances probably no longer felt the same connection as they were when the curse happened. But for Dexter he felt like Raven wouldn't want him anymore cause while everything they did in the curse was real, it only happened bcs they were pushed together by their parents on not by choice and how he wished that things would have been different so that they can be together. BUT at some point they do talk about it with how they both feel like the tension was too thick and the realized, both of their feelings didn't change bcs at the end of the day they fell in love for who they are not bcs of destiny and that is the truest love of all, and then to the cherry on top Dexter kisses Raven's hands and say "to me, you're still the fairest one of all" just like back then at the curse. I don't know I just think it's just such a wholesome heart warming way how their relationship would start in your AU

Love to think that even after the curse is broken, Dexter still kept his charming chivalrous ways and pretty much openly treats Raven like a princess and Raven blushing and sighs full of love of having someone who wants to adores her despite her destiny. They're still ever after high's power couple! I could imagine they have a little banter on it too

Raven: "hey, remember when (embarrassing childhood memory from the curse)"

Dexter: "okay now, you only saw that bcs of the curse so that doesn't count!"

Raven: "so does that mean it still happened even without the curse?"

Dexter: ". . . OH HEY LOOK! THEY'RE SELLING YOUR FAVORITE DESSERT LET'SGOGETSOMMEYEAH?!?! ⁄⁠(⁠⁄⁠ ⁠⁄⁠•⁠⁄⁠-⁠⁄⁠•⁠⁄⁠ ⁠⁄⁠)⁠⁄"

Raven: " ¯⁠\⁠_⁠(⁠ ͡⁠°⁠ ͜⁠ʖ⁠ ͡⁠°⁠)⁠_⁠/⁠¯"

I’m not sure if the characters would remember much at all from the Undoneverse once they return? Their real selves and memories are pushed back into place once they get back, fixing the timeline, so a lot of their time in the other world completely disappears.

I personally don't like the swapped at birth theory but the way you incorporated the swapped destinies doesn't rely on that and the idea and its execution are so cool

in the sense that Raven and Dexter aren’t faking their affection or putting on a performance based on what others have said they should be like. they genuinely have an affection for each other and can’t wait for their destiny to play out and be together forever.

even once the curse is broken that doesn’t change Dexter’s feelings towards Raven(since he had them before the curse was cast); so i wonder if Apple would feel any kind of resentment towards Raven for the fact that Raven got the perfect prince charming, meanwhile Apple’s perfect prince is lost forever in a false reality.
