Switched up breakfast this morning with a keto friendly breakfast taco. Instead of a flour or corn taco shell, whipped out the waffle maker and made a shredded parmigiana cheese “shell” with some if my preferred seasoning mix. Let ir cool to shape and harden. And yes it crunched too. Then tossed in scrambled eggs & spinach, cheese, leftover chicken & some sliced up grape tomatoes. @tiktokketo is the brain behind this hack for the shell.
