On the topic of rice...
One of the easiest things to make that makes me feel good about cooking but has low effort is onigiri. My recipe below for 3 onigiri (one meal + leftovers for the next day)
1cup sushi rice (rinsing important in this case)
1cup water. Set to cook on low and covered. I like to mix in some dashi or miso for flavour but its not necessary.
Once ready uncover and leave it until luke warm. Go watch a movie or prepare the filling or both.
I make mine with tuna, mayo and pickled ginger as I always have these ingredients and its delicious. But you can put anything in them which is what makes them so easy.
1 small can tuna + a squirt of mayo (and salt and pepper). Mix it all up and set aside.
Assembly.
You'll need a bowl of water, a plate of salt, strips of seaweed (optional) and sesame seeds (also optional). Wet your hands in the bowl and cover with salt. Grab a 3rd of the rice and make into a ball. Make a hole with your thumb and put some tuna mixture and some ginger and roll up. You can make them spheres or triangles, up to you. If you're using extras then wrap in seaweed and sprinkle with sesame seeds.
this sounds delicious! i will also add that i use a sushi rice seasoning on rice, and I think I'll make this recipe with the rice seasoned :)
1 cup of rice
1 tablespoon sugar
1 teaspoon salt
1/8 cup rice vinegar (you can use up to 1/4 cup but it can be intense!)
mix it into the rice when the rice is hot (you can do it when it's freshly made or reheated).
