I’ve already written about packing healthy school lunches for children here. But what about you, the adult? If you are working full time or going to school, you might want some ideas on simple ways to create a nourishing lunch. Of course, taking leftovers is always an option, but what about something new?

Chicken Fajita Salad with Spicy Avocado Dressing

If you are vegan or vegetarian you can substitute cooked blacked beans or sautéed tempeh for the chicken. I think you’ll find the Spicy Avocado Dressing rather addicting! Tom and I like to make a batch of this dressing with the whole jalapeño—seeds and all, but for the children we make it without the seeds.
