These ice cream bars are hard to resist because they have sweet blueberries, crunchy oat crumble, and creamy vanilla ice cream. This dessert is great for the summer or any time you want something sweet.
Ingredients: 2 cups blueberries. 1/4 cup sugar. 1 tablespoon lemon juice. 1 cup rolled oats. 1/2 cup almond flour. 1/4 cup coconut oil. 1/4 cup maple syrup. 2 cups vanilla ice cream.
Instructions: Warm the oven up to 175F 350C. Put blueberries, sugar, and lemon juice in a saucepan and mix them together. It will take about 10 minutes of cooking on medium heat until the mixture gets thick. Take it off the heat and let it cool down. Rolling oats, almond flour, coconut oil, and maple syrup should all be mixed together in a bowl until the mixture is crumbly. Put half of the oat mixture in the bottom of a baking dish that has been lined with parchment paper. Cover the oat layer with the blueberry mixture that has been cooled. On top of the blueberry layer, crumble the rest of the oat mixture. The crumble should be golden brown after 20 to 25 minutes in the oven. Allow to cool completely. Once it's cool, spread the softened vanilla ice cream over the crumble layer in a thin layer. Put it in the freezer for at least 4 hours, or until it gets firm. Cut into bars and serve cold.
