My favorite MCD ship is extremely unsurprisingly ZOEYMAU. I LIVE I LAUGH AND I LOVE ZOEYMAU. I love it when elves give up their immortality for their dark haired mostly human counterpart. It speaks to me.
My Street is a little harder, since I haven't watched it in years (tho I should prepare for the new season... Whoopsie) but the one I'm most partial to is Zanemau. They are the bestest of friends and they know each other on such a level that I cannot help but love them a lot, whether platonic or romantic.
If I could change one thing about the Aphmau universe... It definitely has to be the way they went about introducing the multiverse aspect. Personally I think it's incredibly interesting, especially if Void Paradox is followed through on at all! But I would not wait until Emerald Secret to do the genre change and I definitely wouldn't include more than is strictly necessary e.g. Mermaid Tales. Tbh it feels like much too broad a scope to have so many interlinked series.
In conclusion, I'd keep the connected Aphverse series as Mcd and My street and mayyyybeeee VP/mod mod world.
I remember when little 11 yr old me watched MCD for the first time I shipped zoemau so fucking hard. I had no idea why anyone wouldn't. In hindsight, should've known I was a raging lesbian with that bc the idea that Aph would've dated a man over Zoey was mind blowing to me
