These Grilled Lemon Chicken Kabobs are a flavorful and healthy choice for your next barbecue. The zesty lemon marinade adds a refreshing twist to classic chicken skewers.
Ingredients: 1 pound boneless, skinless chicken breast, cut into 1-inch cubes. 2 lemons, juiced and zested. 3 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and black pepper to taste. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: Put olive oil, minced garlic, dried oregano, salt, and black pepper in a bowl. Add the lemon juice and zest. To make a marinade, mix it well. Put the chicken cubes in a bag with a zipper and pour the marinade over them. Put the bag in the fridge for at least 30 minutes with the lid on. Warm up the grill over medium-high heat. Putting the chicken that has been marinated, chunks of bell pepper, and chunks of red onion on the soaked wooden skewers one after the other. After the grill is hot, put the kabobs on it and cook for 10 to 12 minutes, turning them over every so often, until the chicken is cooked all the way through and the vegetables are soft and slightly charred. Grilled lemon chicken kabobs should be served hot, with extra lemon wedges and fresh oregano on top if you want.
