Everyone in the family will love these Crockpot Cheesy Chicken Burritos for dinner. They are quick and easy to make. They have soft chicken, tasty beans, corn, and melty cheese that will satisfy any Tex-Mex craving.
Ingredients: 1 lb boneless, skinless chicken breasts. 1 packet taco seasoning. 1 cup salsa. 1 can black beans, drained and rinsed. 1 cup frozen corn kernels. 1 cup shredded cheddar cheese. 6-8 large flour tortillas.
Instructions: Place chicken breasts in the bottom of the slow cooker. Sprinkle taco seasoning over the chicken. Pour salsa over the chicken. Add black beans and corn on top. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and tender. Shred the chicken using two forks and mix it with the beans and corn. Warm tortillas according to package instructions. Spoon chicken mixture onto each tortilla, sprinkle with cheese, and roll up into burritos. Serve hot with additional salsa, sour cream, and guacamole if desired.
