Ingredients: 1 lb large shrimp, peeled and deveined. 1/2 lb long beans, trimmed and cut into 2-inch pieces. 2 tablespoons XO sauce. 2 cloves garlic, minced. 2 tablespoons vegetable oil. Salt and pepper to taste. Chopped green onions for garnish.
Instructions: In a big skillet or wok, heat the vegetable oil over high heat. Stir-fry the minced garlic for 30 seconds or until fragrant. Stir-fry the shrimp for two to three minutes, or until they become opaque and pink. Stir-fry the long beans and XO sauce for an additional three to four minutes, or until the beans are crisp-tender. To taste, add salt and pepper for seasoning. Add chopped green onions as a garnish. Over steamed rice, serve hot.
