Happy National Lemon Chiffon Day! First invented in 1927, the lemon chiffon cake is an American creation that got its start in the state of California, though it was not created but a culinary artist as one might expect. Instead, it was made by a man named Harry Baker, an insurance salesman who later became a caterer. The light and airy cake served by Mr. Baker was complemented by simply sprinkling powdered sugar on top, or by icing it to perfection. And people simply couldn’t get enough of it! But Mr. Baker wouldn’t share.   After keeping the recipe a closely-guarded secret for over twenty years, he eventually sold the recipe in 1947. The recipes for “chiffon cake” were first published in a pamphlet and then eventually became a premade mix. People have been mixing drinks for centuries, often to make an ingredient more palatable or to create medicinal elixirs.   It wasn’t until the 17th and 18th centuries that the precursors of the #cocktail (e.g., slings, fizzes, toddies, and juleps) became popular enough to be recorded in the history books.   The origins of the word “cocktail” have been debated. The first written mention of cocktail as a beverage appeared in The Farmers Cabinet, 1803 in the United States. Happy National Melba Toast Day! It is named after Dame Nellie Melba.  The stage name of Australian opera singer Helen Porter Mitchell.   It is said when Nellie Melba gained weight in her later career, Chef Auguste Escoffier created a thin baked toast for her diet, viola, Melba toast.   In 1925, the Mayo Brothers prescribed the “Eighteen Day Reducing Diet” to Ethel Barrymore. Happy National Crunchy Taco Day! #Tacos predate the Europeans in Mexico and were discovered to be the food of choice by the indigenous folk in the Valley of Mexico.  Obviously, the Spanish wanted to stake their claim on such fine fare, and dubbed them “tacos.”   Ensenada, Mexico is said to be the birth place of the fish taco.   A “Taquería” is a Spanish word meaning taco shop. Happy National Corn Dog Day! Corn dogs were first introduced by German Texans in the 1920s. The corn dog was first made as just a sausage rolled in cornbread battered and fried. Many years later, sticks were added to corn dogs as a unique food-holding tool that would later create the modern corn dog. In 1927, the idea of fried food on a stick was filed for a patent in the US. In 1929, the patent was accepted. On the patent, it states that many foods other than sausages can also be used in the same way that a corn dog is prepared. Happy National Meatball Day! Every Culture Has a Meatball… Swedish köttbullar, Spanish albondigas, Dutch bitterballen, Greek keftedes, South African skilpedjies, and from India through the Middle East kofta.   Italian meatballs aren’t what you think. Polpettes are smaller than their American cousins, made with equal parts bread and meat (sometimes even fish), and very much a simple peasant dish. Almost always made at home, polpettes are the main course and sometimes served in a light broth. No marinara or pasta to be seen! Spaghetti and meatballs with tomato sauce is a purely American invention, the result of a surge of Italian immigration to the U.S. and the adaptations they made to available ingredients.   The truth about meatballs is that they are a clever way to dress up tough, cheaper cuts of meat. Meatballs also use up stale bread, which extends the meat portion of the recipe. And so, the meatball was traditionally a great way to stretch ingredients and serve a hungry family. Happy National Frozen Food Day! Freezing food preserves it from the time it is prepared to the time it is eaten. Since early times, farmers, fishermen, and trappers have preserved their grains, produce, and meats in unheated buildings during the winter season.   It is believed that first use of freezing food in industrial food sales took place in the 1800s. Happy National Cold Cuts Day!
