Add the wet ingredients to the dry ones and mix them together just until they are mixed. It's okay if there are some lumps; don't mix it too much. Warm up a nonstick griddle or skillet over medium heat and use cooking spray or butter to rub it down a little. For every pancake, put 1/4 cup of pancake batter on the pan. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. If you need to, add more butter or cooking spray to the pan and do it again with the rest of the batter. Top the pancakes with your favorite things, like whipped cream, maple syrup, or fresh berries. Serve them hot.

Ingredients: 1 cup granulated sugar. 1/4 cup strong brewed coffee. 1 can 14 ounces sweetened condensed milk. 1 can 12 ounces evaporated milk. 4 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat your oven to 350F 175C. In a saucepan over medium heat, melt the granulated sugar until it turns into a golden caramel. Pour the caramel into a 9-inch round cake pan and swirl it around to coat the bottom evenly. In a blender, combine the brewed coffee, sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend until well mixed. Pour the coffee-flavored mixture into the caramel-coated cake pan. Place the cake pan inside a larger baking dish, and fill the larger dish with hot water to create a water bath around the flan pan. Carefully transfer the setup to the preheated oven and bake for 50-60 minutes, or until the flan is set. You can test for doneness by inserting a toothpick into the center; it should come out clean when the flan is done. Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate the flan for at least 4 hours or overnight. To serve, run a knife around the edge of the pan to loosen the flan. Place a serving plate over the pan and quickly invert it to release the flan with the caramel sauce on top. Slice, serve, and enjoy your delicious coffee-flavored flan!

Instructions: In a mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, milk, vegetable oil, egg, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay. Heat a non-stick skillet or griddle over medium-high heat and lightly grease it with butter or oil.
