Ingredients: 1 lb beef stew meat, cubed. 1 onion, chopped. 2 carrots, sliced. 2 celery stalks, sliced. 3 cloves garlic, minced. 1 cup pearl barley. 8 cups beef broth. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the beef cubes and brown them all over. Put in garlic, onions, carrots, and celery. Make sure the vegetables are soft. Add the beef broth, bay leaves, thyme, salt, and pepper, and stir them in. Once the soup starts to boil, lower the heat and let it cook slowly for 45 to 50 minutes, or until the barley is soft and the beef is fully cooked. Check the seasoning and make changes if needed. Serve hot, with fresh parsley on top if you want.
