Ingredients: 2 ripe bananas, mashed. 1/2 cup sugar. 1 egg. 2 tablespoons melted butter. 2 cups all-purpose flour. 2 teaspoons baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground nutmeg. Oil for frying. Powdered sugar for dusting.
Instructions: In a mixing bowl, combine mashed bananas, sugar, egg, and melted butter. Blend thoroughly. Mix the flour, baking powder, salt, and ground nutmeg in a different bowl. Add the dry ingredients to the banana mixture gradually, stirring to fully incorporate and form a dough. Preheat oil to 350F 175C in a deep fryer or heavy-bottomed pot. Dough spoonfuls should be dropped into the hot oil and cooked for two to three minutes, turning occasionally, until golden brown. Using a slotted spoon, remove the doughnuts and set them on paper towels to absorb any remaining oil. Dust the banana doughnuts with powdered sugar while they're still warm.
