Essek is also has never been depicted (in campaign or animated show) receiving military or combat training)...

"Why didn't Essek change for Verin?" Matt said something like the reason Essek was able to change is because the Nein showed him it was possible. There could be any number of reasons why he didn't believe that was possible with Verin, but I'd guess it has something to do with the fact Verin believes in the Luxon faith. Maybe he didn't think Verin could forgive him if he knew the truth.
Rewatched a little of season one of Wheel of Time, and the hill I’ll die on is that the kids are boring. I’m sorry but if you find a bunch of award winning actors to play all the Aes Sedai, you should just pivot and make a show about them. They can mention in passing what the Dragon is doing, but this show would have been infinitely better as a spin off about the queer White Tower antics.
