It’s recently occurred to me that most people don’t like vegetable soup. These same people claim they don’t like vegetables. Tomfoolery. Vegetables are great. However I’ve realized recently that most people don’t make vegetable soup with potatoes or ground beef. The beef is entirely optional I suppose but why would you not include potatoes. They absorb the flavor of the broth so amazingly. And it makes it more hardy and filling. I’d hate vegetable soup too if my parents couldn’t make it well.
