Experience the flavors of Paris with this hearty and comforting chickpea ratatouille. Packed with vibrant vegetables and aromatic herbs, it's a delightful vegan dish that will transport you to the streets of Paris.

Ingredients: 2 cans chickpeas, drained and rinsed. 1 large eggplant, diced. 2 zucchinis, diced. 2 bell peppers, diced. 1 onion, diced. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 can diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste.

Instructions: In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until fragrant. Add diced eggplant, zucchinis, and bell peppers. Cook until softened. Stir in chickpeas, diced tomatoes, thyme, oregano, salt, and pepper. Cover and let simmer for 15-20 minutes, stirring occasionally. Once vegetables are tender, adjust seasoning if needed. Serve hot, garnished with fresh herbs if desired.

Prep Time: 15 minutes

Cook Time: 25 minutes

The next morning Margaret caught a flight back to Boston from Paris. I cleaned up our Airbnd and headed back to the train station to head back to London.

My last meal in Paris before jumping on the train was at Le Tricycle. Take a look inside:

I enjoyed a hot dog and a carrot juice in their lovely upstairs seating. I then mailed some postcards and caught my quick and comfortable Eurotrain back to London. 

An eventful trip all around. We’ll be back Paris, we love you! 

On Margaret’s last down in Europe we went on a picnic.

There happened to be an all-vegan grocery store in Vincennes right down the street, Natralia Vegan. So many vegan cheeses!

So we grabbed some vegan cheeses, fresh cherries and stopped by a bakery and made our way to the nearby park. 

Brunch, the Eiffel tower and a trip down the Seine. We were determined to experience as much of Paris as we possibly could in our four days!

We weren’t able to check out Notre Dame because of the fires, but we saw it as we passed by on the boat tour.

And while the Eiffel Tower is ugly, it is an experience! So, we experienced it. And what a view! It’s certainly a very fancy way to see the city, as long as you aren’t afraid of heights!
