A flavorful and colorful vegan stir-fry featuring crisp asparagus, bell peppers, and onions, tossed in a savory sauce.
Ingredients: 1 bunch asparagus, trimmed and cut into bite-sized pieces. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small onion, thinly sliced. 3 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon maple syrup. 1 teaspoon ginger, grated. 1 teaspoon cornstarch. 2 tablespoons water. 2 tablespoons chopped green onions, for garnish. 2 tablespoons sesame seeds, for garnish. Cooked rice, for serving.
Instructions: In a small bowl, mix soy sauce, sesame oil, rice vinegar, maple syrup, and grated ginger. Set aside. In another small bowl, dissolve cornstarch in water to make a slurry. Set aside. Heat a large skillet or wok over medium-high heat. Add a splash of water or oil if needed. Add minced garlic, sliced onion, and bell peppers to the skillet. Stir-fry for 2-3 minutes until slightly softened. Add asparagus to the skillet and continue stir-frying for another 3-4 minutes until asparagus is tender but still crisp. Pour the sauce mixture over the vegetables and stir to coat evenly. Cook for an additional 1-2 minutes. Add the cornstarch slurry to the skillet and stir well. Cook for another minute until the sauce thickens. Remove from heat and transfer the stir-fry to a serving dish. Garnish with chopped green onions and sesame seeds. Serve hot with cooked rice.
