One Tray Roast
I like roasted vegetables bc everything you need is to prepare vegetables and then the oven does all the work. What can be easier?
1. What is required:
5 medium potatoes
1 zucchini or courgette
1 bell pepper
1 onion (yellow or red)
2 cloves of garlic
1 tbsp olive oil
favourite spices (I am using black pepper, garlic powder, thyme, and dried dill)
salt to taste
2. The first thing to do is washing and cutting potatoes. Ideally, you want your potatoes to be the same size. It does not have to be perfect but try your best. I like to cut potatoes into quarters. Then I put potatoes in a pan and covered with water until it levels with potatoes. Put the pan on the stove and bring it to boil. Once it starts to boil, reduce the heat and let it cook for 7-8 minutes. You donāt want potatoes to be fully cooked but just be softer so all vegetables will be roasted at the same time.Ā
3. Cut the remaining vegetables.
4. When potatoes are cooked, place all vegetables on a tray. Add olive oil, spices, salt and give it a good mix. Donāt forget to slice garlic. Of course, if you donāt like it, feel free to skip it but I am a fan of garlic and in my opinion it makes any dish better (hm š¤ not desserts but who knows probably some cakes comprise garlic). Look how colourful and delicious it looks like. When you roast vegetables, you want them to be one level to get nice crispiness. If you think, itās overcrowded, use two backing dishes. I am just too lazy to do it but I believe you are a better person. Roast vegetables at 200 C or 392 F until golden brown or everything is cooked. I roasted my vegetables for 25-30 minutes and it was enough.Ā
5. After half an hour, here is the final result. It is as tasty as it looks like. Who does not like roasted vegetables? If you have, you can also add vegan sausages. Roasted sausages are lit. You can use eggplants, mushrooms, whatever. I used what I had. Itās very cheap and I assume everyone has some vegetables and oil with spices to treat yourself š„ŗ

Na dva dana, Trg bana Josipa JelaÄiÄa, postane glavna atrakcija svim ljubiteljima zdravog i obnovljivog života, i onima koji u svojoj hrani ne preferiraju meso, rijeÄ je naravno o ZegeVege Festivalu. Svake godine, festival ponudi brojnim OPG-ovima, obrtima i firmama Å”tand da predstave svoje organske proizvode, vegansku i vegetariansku hranu. Za one znatiželjne bila su predavanja tijekom oba dva dana o brojnim interesantnim temama, a za one gladne samo o hrani i kako je najbolje pripremiti ( te je probati na licu mjesta ;) ). A nakon dobre klope, svi su se mogli pridružiti plesnim skupinama kod pozornice, i zaplesati s njima. Å arolikost festivala se može vidjeti u fotkama :D āāā For two days, Ban JelaÄiÄ Square becomes the main attraction for anyone that prefers to live a healthy & sustainable lifestyle, and for those that donāt include meat in their meal plan, itās of course the ZegeVege festival. Every year, the festival offers a place for all the companies & local family run business to showcase their organic products, vegan & vegetarian food. For those curious, there were also lectures which touched upon many interesting topics, and there were a few cooking workshops for those who just think about food. Lastly, everyone could break into a dance with the dance groups that performed near the stage on an hourly basis. You can see how colourful the festival was in the photos below :D
