These homemade chocolate cupcakes are rich and chocolaty, and the vanilla frosting on top is sweet and creamy. Just what you need to satisfy your sweet tooth!
Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup buttermilk. 1/4 cup vegetable oil. 1 large egg. 1 tsp vanilla extract. 1/2 cup hot water. For Vanilla Frosting:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 2 tsp vanilla extract. 2-3 tbsp milk.
Instructions: Start by heating the oven to 350F 175C. You can line a muffin tin with cupcake liners. Sift the cocoa powder, sugar, baking powder, baking soda, and salt together in a bowl. Add the vegetable oil, egg, and vanilla extract to a different bowl and mix them together using a whisk. Mix the dry and wet ingredients together until they are just mixed. Add the hot water and stir until the batter is smooth. It will be thin, but that's okay. Fill up each cupcake liner about two thirds of the way to the top with batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cupcakes out of the oven, let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. To make the vanilla frosting: Put the softened butter in a bowl and beat it until it is smooth and creamy. Add the powdered sugar slowly and beat until everything is well mixed. Add the vanilla extract and two to three tablespoons of milk. If necessary, change the consistency to get the frosting texture you want. Use a piping bag or a spatula to frost the cupcakes with the vanilla frosting once they are completely cool.
