These Cherry Pie Cupcakes are a fun take on a traditional dessert. There is a sweet cherry pie filling in the middle of a moist vanilla cupcake, and a delicious cherry-flavored buttercream frosting on top.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. 1 cup cherry pie filling store-bought or homemade. 1/2 cup unsalted butter, softened for frosting. 2 cups powdered sugar for frosting. 1/4 cup cherry pie filling for frosting. Red food coloring optional, for frosting. Cherries for garnish optional.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk. Put away. Melt the butter and mix it with the sugar in a separate large bowl until the mixture is light and fluffy. Adding the eggs one at a time and mixing them in is the next step. Slowly add the dry ingredients to the wet ingredients, mixing in the milk every so often. Start and end with the dry mix. Don't mix any further than that. Fill each cupcake liner about two thirds of the way to the top with cupcake batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. Use a cupcake corer or a small spoon to take out the middle of each cupcake once they are completely cool. Put cherry pie filling in each hole. Spread the softened butter out in a different bowl and beat it until it is smooth and creamy. Add the powdered sugar slowly and beat until everything is well mixed. Add 1/4 cup of cherry pie filling and a few drops of red food coloring, if you want the color to be pink. Cover the cherry pie filling on each cupcake with the cherry-flavored buttercream frosting, which you can pipe or spread. Add a cherry to the top of each cupcake if you want to.
