Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 1 tsp vanilla extract. 2 cups all-purpose flour. 1/4 tsp salt. Red or pink food coloring optional. Valentine's Day themed sprinkles optional.
Instructions: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix until well combined. Gradually add the all-purpose flour and salt to the mixture. Mix until a soft dough forms. If using food coloring, add a few drops to the dough and knead until the color is evenly distributed. Shape the dough into a disc, cover with plastic wrap, and refrigerate for at least 30 minutes. Preheat the oven to 325F 160C and line a baking sheet with parchment paper. On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness. Use heart-shaped cookie cutters to cut out cookies and place them on the prepared baking sheet. If desired, sprinkle the cookies with Valentine's Day themed sprinkles. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
