It does! You can still find the original G!Sans post if you look up Boruboru Tumblr! Even though their tumblr is deactivated you can find their art by their signature. That’s what I did but I have a rough time finding what he and his Papyrus is like or information on them. People tend to mix elements of his design with Echotale Sans which is a interpretation of the same character but their relationship to Frisk is the main differing factor that separates the two aus.
It would be fun to see you hyperfixate on a au by its premise alone as some aus only have that and make it work! I do think its best to ask the creator of a old au that is still active if old posts they answered would still be considered canon like in the case of Reapertale as the idea of the canon could have changed with time as people ideas change and evolve from its original idea.
I also like seeing new blood come into the fandom and offer their input on things. Signanothername art made a lot of people adore how complex Killer is and show platonic relationships which is rare in this fandom. It gave the character a fresh take with their headcanons but kept the essence of what made him so compelling.
Which I adore seeing what people keep for the core of the character if they do or what they change and make the character compelling like in the case of Nightmare and Dream. Dreamtale laid the foundation, had good pieces and story moments which people like and took what they liked or added to make something new compelling to more people who didn’t read the original. I like the canon of characters for how nuance they can be or have good pieces also I adore the fanon for bringing a fresh take to the table and getting characters you see about changing those pieces of character personality or beats to make them interesting like Dream and Nightmare.
Another good example is blueberry you know that 2017 Uwu Blue? People made him a menace! It’s hilarious. They made this uwu blue a menance, a gremlin or like a little brother to Blue. Highly recommend that shit is funny I love it. I love how you can take what you disliked as a kid and make a different version of the same character to something funny. He doesn’t have a canon the fandom attuide towards him is what changed overtime is what causes the spike in that type of fanart for him. There’s been a increase in powerhouse Underswap Sans fanart or a mature version of him. Overall it’s been a fascinating and fun journey seeing how the fandom changed as I stay in it through the years towards certain characters and what changes or remain the same. Wouldn’t move fandoms for the world even through the rough times.

I think a lot of aus have lore depending on its development process, it’s more of a case of if it developed past the designs point is could be when lore is made or maybe lore is made before the design and if the creator gets that far if they are still interested in the au or before something happens.
Underpatch as a example which is G!Sans and G!Papyrus au was going to have lore, but their creator Boruboru had unfortunately deactivated their Tumblr before we could get their origins. So sometimes you got to make up your own for such cool characters as a result.
Chesstale as another example which is a discontinued au got a basic concept down and ideas with small lore. Got the designs and roles and world idea down but not much lore to it.
I know Reapertale have lore to it though it’s best to ask what the creator consider canon lore as I had the unfortunate mistake of taking every text post to archive before finding out to take those with a grain of salt.
