That’s a very good question, to be fair I find white hair (and anything white/fair/pale in general tbh) to be very tricky to render, in fact it took me a really long time, before dmc darker skin tones and hair colors were actually my comfort zone so it took a lot of trial and error to learn how to paint the Spardas in a way that looked good to me, and if anything I feel like only just recently got the hang of it!!
The biggest thing at least in my experience, is to never deal in absolute colors, no true whites or blacks - white hair usually tends either more beige-ish or blue-ish depending on tone, lighting etc. actually a lot of time the colors I end up picking are a muted beige for the base/shadow color, and a light desaturated pink for the highlight color! For that latest V portrait I did, specifically, I chose a more saturated lilac for the highlights (at least by comparison).
The thing that darker hair and skin have that pale colors don’t is the depth of tones, you can have a very wide range of shades from the darkest to the lightest, so the best way to approach light hair is by applying that same logic and having a wide range from the darkest shadow to the lightest highlight.
Usually, when panting the Spardas, the base color (I use my flats as the shadows and paint the light on top) I use for hair and skin is actually pretty close! I just take the same color I used for the skin and shift it juuust slightly lighter and less saturated. I also like to have a multiply layer in a muted beige on top of my finished painting with the contact shadows + another one in overlay in whatever light color feels appropriate for the scene if there’s any bright, direct light.
