Well for one thing, you (or the West for that matter) didn’t create the word genocide, it was coined by a Polish-Jewish lawyer named Raphael Lemkin. In his book, the Axis Rule in Occupied Europe he showed his research of the way the Nazi occupied Europe and narrated how he thought the crimes the Nazi committed against the Polish during their occupation came down to 5 main policies that displayed their will to completely destroy the Polish nation which included:
1) The mass killings of Poles
2) Bringing “serious bodily or mental harm to members of the group”,
3) Planned deterioration of living conditions "calculated to bring about their destruction
4) Implementation of various "measures intended to to prevent births within the group" such as promotion of abortions, burdening pregnant women, etc.
5) Forced transfer of Polish children to German families
He used these instances as proof for the Nazi plan to completely terminate the Polish identity and these markers are still used by the Genocide Convention as proof of genocidal intentions. He also used this word to describe the atrocities that Nazi committed against the Jewish people during the Holocaust. Lemkin also spent the rest of his time advocating for an international convention to stop the rise of “future Hitlers”, and on December 9, 1948 the U.N. authorized the Genocide Convention, which had many of its clauses based on Lemkin’s own research and proposals.
Also this is a very narrow idea of racism and discrimination. Anti-semitism was rampant in American and Western society years before Hitler came into power. I mean in 1942, American literally turned away a boat load of Jewish people seeking refuge. People didn’t look at Jews and think “Oh man they look just like us, so their murders must be important and we have to create a word that describes their condition and the crimes being committed against because we care sooooo much about them”. In reality, most people didn’t really given a shit about all of the Jews being murdered, only when America and the West was being directly threatened by war did they retaliate.

Justifying calls for genocide as "women rightfully mad at the patriarchy" while downplaying the way the government has already been and is continuing to oppress the people you insist are being punched up towards is a choice. Is it considered "complaining about women" now to say calling for the death of everyone different than you is unhinged? And it's weird as hell to act like this is just casual behavior women normally engage in that's above critique.
Dehumanization: Genocidal Rhetoric in FE Three Houses and the Fire Emblem Community
While I have negative thoughts regarding how Three Houses presents its themes (in fact I think it's arguable that there even are any that remain consistent for the entire game no matter the route), there exists one topic that comes up very often in the game that I feel is worthy of discussion and awareness, including how the fandom has chosen to react to it: dehumanization.
In a simple definition, dehumanization means to treat an individual or group in such a way that deprives them of human qualities; this includes inhumane conditions or treatment.
In contextual terms, most of the time it does not end up solely interpersonal. It is a component of various atrocities against groups of people, including discrimination, colonization and genocide.
One aspect of how Three Houses uses this term in its storytelling is the rejection of and criticism of dehumanizing language. Of course, to make that claim, examples of its existence and its eventual dismantling is needed.
You also see this in person-to-person context, regarding Dimitri referring to himself and his enemies as monsters, Felix calling Dimitri a boar, and so on.
We see the conclusions of these very prejudices in various ways. Many times they are clumsy, yes, but that's a bit of a different conversation. Regardless of writing quality, the intended end goal is for discrimination on the basis of origin to be condemned and done away with. It's the primary goal of Claude's route, as well as a natural goal that comes as a result of Dimitri bringing the truth of the Tragedy to light. Many individual character stories tackle this issue as well.
But there's two other groups who partake in this very dehumanizing rhetoric. The first is Those Who Slither in the Dark.
Beasts. That's a commonly used word for dehumanization. To compare beings of personality, life, compassion and values to monsters or animals, with no comprehensible thought.
The second group I think of uses the same words.
It would be simple to say that they're written to say these things in context of "freeing humanity from non-human beings", but in truth, it's not as simple as one race of beings being called something other than human. It's the denial of humanity for Rhea, as well as Seteth and Flayn by extension.
This is a series of games that have featured many races of people, all of which have these very same qualities that we call humanity. We call it that because we ourselves are human in real life, so of course we can only define what makes us human by the terms of our own race of being, as our only comparable living creatures are not on that level of awareness, feeling or emotion.
But the non-human characters in Fire Emblem are capable of that. That includes the Nabateans. They are not human, but they have humanity. It is an undeniable fact from how they're written, since they're portrayed as people first and foremost.
And as covered, denial and deprivation of humanity from one group of people toward another is textbook dehumanization. A tool of discrimination, oppression and genocide.
By denying the Nabateans/Goddess Children humanity, the essence of emotions, ethics, morals and compassion, she justifies taking part in continuing their genocide that was started by Those Who Slither in the Dark and Nemesis.
Now you may ask, what about her classroom ask about simply stripping Rhea from power? Or how she lets Flayn and Seteth flee?
Genocide is not just the act of extermination, that's merely the ninth stage. Arguably, Edelgard and Hubert engage in many different stages. Classification (us vs. them/Humanity vs Beasts/Children of the Goddess), Discrimination (denial of civil rights vs. stripping Rhea of any power or influence), Dehumanization (already explained), Organization (the planning of a people's destruction vs. Edelgard saying she seeks to obliterate Rhea and the other Children of the Goddess), Polarization (proganda spread by hate groups vs. Edelgard sending her manifesto to all of Fodlan), Preparation (identification due to values or ethnic traits vs. Edelgard able to identify Seteth and Flayn as Nabateans at all), Extermination (mostly carried out by Nemesis already, but Edelgard still seeks to kill Rhea), and Denial (denying the existence of any wrongdoing vs. Edelgard writing history in her epilogue as freeing humans from the tyranny of beasts).
Nothing that Rhea has done will ever be reason enough to treat these people as less than fellow sentient beings who deserve rights, respect and dignity, just as humans would. And the writing, clumsy as it may be, supports the view that Edelgard's actions and feelings toward Nabateans (ones that honestly extend to other draconic/non-human groups if a few of her lines in FE Heroes are to be taken as compliant with canon) are just as bad as those done towards the various marginalized ethnic groups in Fodlan, like those from Brigid, Almyra and Duscur. To further corroborate this, the word 獣 (beast) in Japanese is used for all of these groups in the game: Hubert talking to Petra, the Slithers talking about humans and Nabateans, the kingdom soldiers talking about the people of Duscur, and Edelgard talking about the Nabateans.
Downplaying or flat out ignoring this is far too common in the FE community. It is not about something as simple as discourse at the end of the day; it's about language, ignorance, and the lack of willingness to even push back against those who would deny, or even revel in/justify these actions. There are entire sub-groups of fans who do this, on top of harassing others off of platforms for differing views of 3H's story. This isn't a case of making some people up to get mad at, there's an entire discord server dedicated to hosting this kind of behavior, many of it tagged as such on this blog:

It may be a fictional depiction of genocide, but the language is no less real; the intent behind the story is not something simply made up. It takes from years of human rights abuses. In a time where multiple genocides are happening concurrently, there is no excuse to let this language fly without some kind of reprimand or consequence.
