Ingredients:
1. 1 package of chicken breast
2. Β½ tsp of salt
3. Β½ tsp of pepper
4. 2 tbs of olive oil
5. 2 cups of frozen broccoli florets
6. 1 cup of sliced carrots
7. 2 tsp of powdered ginger
8. 2 tsp of minced garlic
9. 1 cup of white rice
10. 1 tsp of onion powder
11. 1 tbs cornstarch
12. 2 tbs of water
13. Β½ cup of chicken broth
14. ΒΌ cup of honey
15. Β½ tsp of red pepper flakes
16. 1 tsp of rice vinegar
17. ΒΌ cup of orange juiceΒ
Method:
1. Prepare the chicken by cutting it up into 1 inch pieces. Place in a large frying pan with the olive oil. Frequently mix the chicken and flip it over while cooking until browned.
2. Put the salt, pepper, and ginger into the pan.
3. While the chicken is browning, make the rice. Prepare the 1 cup of white rice in a separate sauce pan. Follow the directions on the rice box. When it is finished set it aside.
4. Cook the sliced carrots in boiling water until fork tender. Then drain them and set aside.
5. Once the chicken is cooked make the sauce. In the pan cornstarch, water, honey, chicken broth, rice vinegar, orange juice, garlic, and onion powder. Let simmer for about 5-10 minutes unitl the sauce is thickened.
6. Then spoon stir-fry over the rice and enjoy!
