A delightful blend of potatoes and sweet potatoes, baked to perfection with aromatic herbs and Parmesan cheese.
Ingredients: 4 potatoes, thinly sliced. 2 sweet potatoes, thinly sliced. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 1/2 cup grated Parmesan cheese. Fresh parsley for garnish.
Instructions: Preheat the oven to 375F 190C. In a bowl, mix together olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Layer the sliced potatoes and sweet potatoes in a greased baking dish, alternating between them. Drizzle the olive oil mixture over the potatoes, ensuring each slice is coated. Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle grated Parmesan cheese over the potatoes, and bake for an additional 15 minutes or until golden and crispy. Garnish with fresh parsley before serving.
