Rachael's Thriftway pick of the week: Abondance. An aromatic, washed alpine cow's milk cheese from the Haute-Savoie sector of France. This raw milk beast has a wide range of flavor. It starts out with violets and roasted peanuts, and then grows brothy and vegetal, and finishes with pepper in the back. It's a lingerer! To balance it out, we're pairing it with juicy Muscat Grapes and Abymes, Vin de Savoie. This white is crisp and cuts through the finishing pinch. A few months ago, while Carl was enjoying his flap of beef cheek on the bed, he looked up at me and asked what I really want to do with my cheese career. I was quick to respond that I want my own cheese department to manage. I want to do all of the ordering with autonomy, facilitate education, and grow a department. I owe it to myself. So Carl suggested that I go and inquire about the Thriftway in Shoreline. It's a cooperative grocery store with a phenomenal selection, a place that prides itself in sourcing locally. I went in and told the store manager that I'm looking to host the show, so-to-speak. He gave a resounding YES! So yesterday, I finished my time with the Cheesemonger's Table. I will miss that crew, but what an exciting new chapter!
