I'm skipping one cannolo that I'll write about later. But, seizing the moment... In Favara, Sicily at Pasticceria Patti. This is a work of art. Local, art, for sure. It's probably my favorite shell ever. Crunchy and completely intact upon eating the entire pastry. The taste was one of excellent pastry with a nero d'Avola red wine, fried in lard. Simple, but certainly the expert hands of someone combined the right mix to make it so. The sheep's milk ricotta had 30% sugar added, and nothing else. Almost whipped, this was light and a great combination with the shell. The size: just right. Perfect for a second breakfast! But the star of this show after all, is the condiment of cubbàita, the almond-sugar sweet that is local to Favara. This was unique and absolutely excellent!
