*Chef Coco's 🍫Mole Recipe 2 Guajillo, 2 Ancho, 3 Chipotle Chilies🌶️ 1 White Onion 2 Corn Tortillas 2 heads of Garlic 1 Fresno Chilie 2 Tomatoes🍅 5 Tomatillos 2 cups of 🐔Chicken Stock 1 cup of 🥜Peanut Butter 8 ounces of Dark Chocolate🍫 ½ cup of Raisins 1 cup Brown Sugar 2 TBSP of Thyme 1 TBSP of Cumin 1 TBSP of Ground Cloves 2 TBSP 🌮 Taco Seasoning Directions: In a dry Sauté Pan toast your Chilies until aromatic and charred. Now toast your Tortillas until GBD (Golden Brown Delicious). Then set aside. Next rough chop your tomatoes, onion, and Fresno Chilie. In a dry Sauté Pan toast your Tomatoes until you get a nice char. In a Sauce Pan melt the 🥜 Peanut Butter and 🍫 Chocolate. Next start adding ingredients to your Blender. *Note: Depending on the size of your Blender you may have to add in batches. I would start with the Chicken Stock. Then add the Veggies. Now break up your Tortillas a little and add them. Drop in the Spices. Lastly pour in the 🥜Peanut Butter and 🍫 Chocolate mixture. Mix until well blended. *Chef Coco's 🐄Beef 🌮Tacos with 🌽Corn Salsa and 🥑Avocado Aioli 🥑 Avocado Aioli 4 Avocados 🥑 1 bunch of Scallions, roughly chopped 2 TBSP Cilantro 1 Cup of Greek Yogurt 1 Lime Juiced and Zested 1 Cup of Mayonnaise 🌽 Corn Salsa 2 cups of Corn from a (off the Cobb is Best) 2 Orange Bell Pepper Small Diced 1 Purple Onion Small Diced 1 TBSP Cilantro 1 Lime Juiced and Zested Ground Beef🐮 Recipe 3lbs. of Ground Beef GBD the Ground Beef (which means Sauté it until Golden Brown and Delicious) and break apart with your Spatula. Add 1 small White Onion Diced 4 TBSP of Taco Seasoning, either homemade, or from a store bought packet. Flash Fry your Corn Tortillas. Add 2 TBSP of Olive Oil to a Sauté Pan and place your Tortillas in and fry on both sides for 2 minutes. *Chef Coco's Spicy Ginger 🍊Orange Chicken Drummets Breasts Thighs Wings *Chef Coco's Spicy Ginger 🍊Orange Marinade 2 Large 🍊Oranges Juiced and Zested 2 tbsp Ground Ginger 2 Tbsp Soy Ginger 1 tbsp Garlic Powder 1 tsp Minced Garlic 1 tsp Cayenne Powder 1 tbsp Onion Powder 1 tbsp Ground Ginger 1 tbsp Garlic Powder 1 tsp Red Pepper 🌶️Chili Flakes 4 Tbsp Granulated Sugar 2 cups of Honey 🍯 Chicken Seasoning 1 Lemon Juiced and Zest Poultry Seasoning Ol Bay Seasoning Salt and Pepper Directions: You can use whatever parts of the Chicken you like, these are the parts I used for this particular recipe. Drummets Breasts Thighs Wings The Spicy Ginger 🍊Orange Marinade will also work well with, Pork, Beef, Turkey, and Tofu. First thoroughly massage your Protein in the Chicken Seasoning. Another option is to marinade it overnight or at the least, one hour. Next place the Protein on a Baking Sheet, then use a basting brush to apply the Spicy Ginger 🍊Orange Marinade. Bake in the oven at 375° for 30 minutes.
