Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 8 oz wide rice noodles. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 2 Thai bird's eye chilies, finely chopped adjust to taste. 1 red bell pepper, thinly sliced. 1 cup fresh basil leaves, torn. 1/2 cup cherry tomatoes, halved. 2 tablespoons soy sauce. 2 tablespoons oyster sauce. 1 tablespoon fish sauce. 1 teaspoon sugar. 1/2 teaspoon black pepper. Lime wedges for garnish.
Instructions: Cook the wide rice noodles until they are al dente, following the directions on the package. After draining, set aside. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped Thai bird's eye chilies and minced garlic. Stir-fry for 30 seconds to release the aroma. Cook the thinly sliced chicken breasts until they become white and stop being pink. This ought to take a quarter to an hour.
