A classic Thai dessert, Sticky Rice with Mango combines sweet coconut-infused sticky rice with fresh, ripe mangoes for a deliciously tropical treat.

Ingredients: 1 cup sticky rice. 1 cup coconut milk. 1/2 cup sugar. 1/2 teaspoon salt. 2 ripe mangoes, sliced. Sesame seeds optional, for garnish.

Instructions: Make sure the water runs clear when you rinse the sticky rice. Put the sticky rice and one cup of water in a pot. Let it sit for twenty to thirty minutes. After letting the rice soak, bring it to a boil. Then, turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until it's soft and the liquid is absorbed. Put the sugar, salt, and coconut milk in a different pot. Slowly heat until the sugar is gone. Put half of the coconut milk mixture on top of the cooked sticky rice. Leave it alone for 10 to 15 minutes so the rice can soak up the flavors. Set a mound of sticky rice on a plate and top it with sliced mangoes. Drizzle the rest of the coconut milk mixture over the mangoes. If you want, you can sprinkle sesame seeds on top. You can serve it hot or cold.
