Chunky Green Tomato, Pinto bean, and Chuck chili on garlic sweet potato tots. Lara gave us a huge sack of her home grown jewels, and the temperature dipper to the drizzly single digits. What else could I make other than a bowl of HOME with my own cheeky twist? Crunchy on the outside garlicky and creamy on the inside sweet tata tots blanketed with sharp bitey English cheddar. Two greedy ladels of lazily simmered chili. And a big dollop of dairy insurance against the heavy handed chili driven spices. Do I have to say anything else?? The Ultimate patty melt. 85/15 Tasmanian Wagyu ground with a little smoked pork belly. Seasoned with tons of coarsely ground black pepper, flaky salt, garlic, and housemade steak sauce. The cheeses are gruyere, jalapeno cheddar, and one other 😉. The schmear is French's mustard forward burger sauce, and there are caramelized onions for those who must... We'll be rolling these of Jezebel's plancha this Winter. In my research of Texas culinary innovations, I knew this one would be a signature. This is one that I've worked on the longest. Just rubbed this incredible Tasmanian grass fed brisket down for a very special Queen's shindig. A few yards/meters of Party Mix and Classic Grampa Roy salty peanut brittles. One of my oldest and dearest friends Karena's grandaddy had a Christmas birthday. He used to make peanut brittle every Christmas. He told me when I was a teenager, how Peanut brittle was his favorite treat his mother made for the holidays that was REALLY for his special day, and it always felt like the best of treats. It is also a very Texan thing to make and share this time of year. It's the first serious candy I perfected. Every single time I make it I miss the Olson (Estes🤠) part of my heart. 💕 I wanted my candy to honor Grampa Roy and his gruff sweetness. I knew the day I met Karena in Algebra class that she was cool. I however did not know her parents and Grandparents would love me and stand by my side through the most important losses of my life. They loved me and Reasie through the first holidays after Momma died, and have never not cared for me. They are truly family in the most sacred and faithful ways. Just like most things I make, this one comes from the best part of me.
