Chai Tea Shortbread Cookies! So fun, so easy, and so perfect to bring to your next tea party or home gathering.
INGREDIENTS Cookies:
1Ā cup (2 sticks)Ā unsalted butter
Ā½Ā cupĀ powdered sugar
2Ā cupĀ all-purpose flour
Ā½Ā tspĀ salt
2Ā bags ofĀ loose Chai Tea
Icing:
Approx. 1Ā cupĀ powdered sugar
Approx. 2 tbsp milk (or water works!)
Sprinkle ofĀ ground cinnamon
Small splash ofĀ vanilla extract
Ā INSTRUCTIONS
1.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Preheat oven to 350ĀĀ°.
2.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā In a large bowl, cream together butter and powdered sugar.
3.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Add in flour, salt, and loose tea leaves. Continue to mix until a soft dough forms (the mix will be dry and crumbly at first, but will form together!).
4.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Roll out dough on a lightly floured surface until itās Ā¼ inch thick.
5.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Cut out dough using your favorite round cookie cutter.
6.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Bake on a parchment-lined baking sheet for 18-20 minutes or until edges are a golden brown and transfer to a cooling rack (so bottoms donāt over-bake!).
7.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā In another bowl, whisk icing ingredients together until smooth (alternate adding powdered sugar and tiny amounts of milk at a time until you reach your desired consistency).
8.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Once cookies are cooled, drizzle, dip, dunk, or spoon the icing over, however youād like to decorate.
9.Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Garnish with small piece of rosemary for some special flare!
10.Ā Ā Ā Ā Ā Gently lift cookie, pinky finger extended, and give a toast to something you love before enjoying with a cup of tea.
