Indulge in the crispy goodness of cod fillets fried to perfection, nestled between soft sandwich buns with refreshing lettuce, juicy tomatoes, and tangy homemade tartar sauce. This recipe, inspired by Rachael Ray, brings together classic flavors for a satisfying fish fry experience in sandwich form.
Ingredients: 4 cod fillets. 1 cup all-purpose flour. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon salt. 1/2 teaspoon black pepper. 2 eggs. 1/4 cup milk. 2 cups breadcrumbs. Vegetable oil for frying. 4 sandwich buns. Lettuce leaves. Tomato slices. Pickles optional. 1/2 cup mayonnaise. 2 tablespoons sweet relish. 1 tablespoon lemon juice. 1 tablespoon chopped fresh parsley. Salt and pepper to taste.
Instructions: Put the flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish. Mix them together. Mix eggs and milk in a second shallow dish. First coat each cod fillet with the flour mixture. Then, coat it with the egg mixture. Finally, cover it with breadcrumbs. Put the vegetable oil in a big skillet and heat it over medium-high heat. Fry the cod fillets in the hot oil for three to four minutes on each side, or until they are golden brown and crispy. Take the cod out of the pan and let it drain on paper towels. To make the tartar sauce, put the sweet relish, lemon juice, chopped parsley, salt, and pepper in a bowl and mix them together. If you want, you can toast the sandwich buns. Place tomato slices and lettuce leaves on the bottom half of each bun, then place a fried cod fillet on top of each. If you want, you can add tartar sauce and pickles to top each fillet, then put the top half of the bun over it. Serve right away and enjoy!

These Asian-inspired salmon kabobs are bursting with flavor from the sweet and savory marinade. Grilled to perfection, they make for a delicious and healthy seafood dish.
Ingredients: 1 lb salmon fillet, cut into 1-inch cubes. 1/4 cup soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 tablespoon grated ginger. 2 tablespoons sesame oil. 1 tablespoon rice vinegar. 1 tablespoon sriracha sauce. 1 bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, whisk together soy sauce, honey, garlic, ginger, sesame oil, rice vinegar, and sriracha sauce to make the marinade. Place salmon cubes in a shallow dish and pour half of the marinade over them. Marinate in the refrigerator for at least 30 minutes. Preheat grill to medium-high heat. Thread marinated salmon, bell pepper, red onion, and zucchini alternately onto soaked skewers. Grill kabobs for 4-5 minutes per side, or until salmon is cooked through and vegetables are tender, basting occasionally with reserved marinade. Serve hot, garnished with sesame seeds and chopped green onions if desired.
