 Apple Tansey- Traditional Colonial Recipe ~

This historical recipe appears in The Compleat Housewife: Or, Accomplished Gentelwoman’s Companion, a cookbook written by Eliza Smith, originally published in 1742. Though the book was published in London, it was later reprinted and published in Williamsburgh, Virginia by the printer William Parks. It is the first cookbook ever to be published in the United States.

As in book: Take three pippins, slice them round in thin slices, and fry them with butter; then beat four eggs, with six spoonfuls of cream, a little rosewater, nutmeg, and sugar; stir them together, and pour it over the apples; let it fry a little, and turn it with a pye-plate. Garnish with lemon and sugar strew’d over it.

I similarly was putting off answering this one until the Ranks post dropped. I don’t think there is any connection to your specialization in basic and your rank. And she is a Lieutenant Sergeant, which would be a subclass of Sergeant, not a Lieutenant. (This Rank doesn’t really exist in the military but similar to Staff Sergeant or Master Sergeant, she is just a Sergeant). Also, you don’t have to go to War College to be promoted. Willa was a Lieutenant and never went to War College.

Overall, we don’t know how one becomes a matrimonialist. Perhaps it’s just an affinity for fertility work? A general excitement for it? Berryessa seems to really really love her job.
