Ingredients: 1 pound ground beef or turkey. 1/2 cup gluten-free bread crumbs. 1/4 cup finely chopped onion. 1 egg. 1 teaspoon garlic powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup gluten-free sweet and sour sauce. 1/4 cup apple cider vinegar. 2 tablespoons brown sugar. 1 tablespoon gluten-free soy sauce. 1 tablespoon cornstarch. 2 tablespoons cold water. Optional: sliced green onions for garnish.
Instructions: In a large bowl, combine ground beef or turkey, gluten-free bread crumbs, chopped onion, egg, garlic powder, salt, and black pepper. Mix until well combined. Shape the mixture into small meatballs, about 1 inch in diameter, and place them in the crockpot. In a separate bowl, whisk together sweet and sour sauce, apple cider vinegar, brown sugar, and gluten-free soy sauce. Pour the sauce mixture over the meatballs in the crockpot. Cover and cook on low heat for 4-6 hours or until meatballs are cooked through. In a small bowl, mix cornstarch and cold water until smooth. Stir the cornstarch mixture into the crockpot during the last 30 minutes of cooking to thicken the sauce. Once meatballs are cooked and sauce is thickened, serve hot, garnished with sliced green onions if desired. Enjoy!
