A couple of pics from around town and how it looks here. Health department begging people to stay inside....the fires from all around California tend to settle in the valley which is where we are at. Local news aside now... I wanna talk about struggle meals. Struggle meals are those ones that when you're getting real tight on food, you still manage to crank out something filling and that tastes amazing. This is one of my family's favorite struggle meals. Were not struggling really right now, but making food stretch further, especially given the rising costs in meats right now ( don't even want to talk about the $10.99 roasts I saw at the store....😠) This is a chili cheese Mac that I add black beans too for added protein and filling up power. For a decent amount of food ( somewhere around 10 good size servings): 1 lb pasta of your choosing, I used mini penne 1 lb ground beef 2 cups shredded cheese ( if you don't have that much, put what ya can, it will still be good) 2 cans of black beans ( or any bean really but black, kidney, or pinto would work best) drained and rinsed. 2 tbsp chili powder 2 tsp cumin 2 tsp salt (or more to taste) 2 tsp pepper (or more) 2 tsp garlic powder 2 tsp onion powder 1 onion chopped small ( really small) a couple tomatoes diced up small 4 cups beef stock So in a large stock pot, brown up your ground beef and onion. Add your stock, tomatoes and pasta. Turn heat on high and bring to a boil, cover and cook for 8-10 minutes ( until pasta is done) add your seasonings, cheese and beans. Stir really well and serve. My kids like it topped with sour cream and green onions from the garden. This cost me a smidge less than $10 to make total and serves 10.
