"Finn said this in an interview so byler is canon we win!!!"
interviews and cons are so minuscule to what is front of your eyes. if you truly believe the biggest byler proof comes from an interview, a phrase/sentence which you analysed or brought out of context to the rest of the interview, then I mean go you, but that can be easily rebutted.
Millie has said in interviews before that she thinks Eleven and Mike will get married, Natalia said that her and the other 'Hawkins teens' had a ronance gc, and so on and so forth.
Actors on TV shows that aren't finished/haven't come out have very strict rules on what they can and can't say, sometimes something that sounds like a slip up of "oh he totally just let out a big spoiler" was planned as a form of marketing. And sometimes people say something that comes across as something different, sometimes actors miss a question completely, or can't hear one, and other times they may relate your question to those common in their prior interviews.
I promise you that a single comicon interview answer isn't the be all end all confirmation for your endgame ship.
If you want 'proof' then watch the show? It's the proof for whatever you want, analyse that however you want, but I assure you everything that comes out of an actors mouth is completely processed to not reveal anything that's actaully a spoiler. (looking at Noah spoiling stuff, marketing...)
Non disclosure agreements are a real and legitimate thing.

"As you see the end of the story, you'll start to feel why certain characters behaved certain ways."
"I think that stuff's really important, like knowing where your character's going. A lot of times you don't get that in TV. But the great thing about this is that we knew what season 1 was, and we had ideas about if it extended -- because we didn't know we'd get picked up -- but if it extended, what the end of the actual thing would be. [...] I think Stranger Things, be it Season 4 or Season 5, has an arc to it that I understand. I feel very proud of that because we're not going to get lost in our story and leave these strands. We're going to tie things up."

*This is an older interview but I suspect it is still very relevant to their vision for the conclusion of the series.
