STEAK WITH CHIMICHURRI - Sirloin steak with fat-free chimichurri, boiled potatoes with dill, and fermented spicy cucumbers • As a Brazilian, I love steak and barbecue. The last time I made steak it wasn't that good. So this time the challenge was to make something better. As I'm still on a diet, I picked a low-fat steak, in this case, sirloin. I have two tricks for the steak. • First, is that before cooking the steak should be close to room temperature, this will allow the meat to get cooked more evenly. • The second trick is to cook the steak, and before it is 100% ready take it from the grill, cover it in aluminum foil, and wait 10 minutes. This process will keep all the juices to stay in the steak when you cut it, making it tastier. • To make the chimichurri I mixed dry oregano, dry coriander, salt, black pepper, red chili, garlic, fresh parsley, and red wine vinegar.
