Today, I thought I'd share something else that I do. Foraging! I am still a baby forager so I only know maybe 10-15 plants well enough to use them confidently. Spruce tips are one of them and this is a fresh batch of spruce tip syrup that I just finished making. I harvested the tips in early May from the spruce in my front yard.
(This thing looks ready to creep into my house.... might be time for a trim)
It's actually got a light, almost citrus-y taste to it. And this time, I added a little vanilla to make the taste a little less astringent. I like it on pancakes more than maple syrup and I am excited to have a batch. It's been a couple years since the last time I made it.
