This Spinach Parmesan Orzo is made in one pot and is quick and easy to make. It has the tastes of soft orzo pasta, fresh spinach, and salty Parmesan cheese. It's great for busy weeknights because it can be a side dish or a light meal by itself.
Ingredients: 1 cup orzo. 2 cups chicken or vegetable broth. 1 cup fresh spinach, chopped. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for one to two minutes, until the garlic smells good. Stir the orzo around in the pan for about two to three minutes, until it gets a light brown color. Add the chicken or vegetable broth and salt and pepper to taste. Bring up the temperature. Turn down the heat, cover the pan, and let it simmer for 10 to 12 minutes, or until the orzo is soft and most of the liquid is gone. Add the grated Parmesan cheese and chopped spinach. Stir the mixture in. Cook for another two to three minutes, until the cheese melts and the spinach wilts. Take it off the heat and let it sit for a few minutes before you serve it. If you want, you can add more Parmesan cheese as a garnish. Enjoy while hot!
