これなんだろ？ 10年くらい前、阿佐ヶ谷「川名」で麻婆豆腐を注文すると白い餡かけ豆腐が出てきた。これが好きだった（すぐ赤い麻婆豆腐に変わってしまった）。阿佐ヶ谷「川名」の「白い麻婆豆腐」オマージュ。 豚ひき肉と生姜をごま油で炒めて、熊本「ホシサン醤油」とみりんで味付け、カツオだしで炊いて、水溶き片栗粉でとろみを付けた。 白くはならなかった。そりゃそうか、醤油みりん使ってる。豚とカツオだしはあうなあ。 #肉豆腐 #豆腐 #tofu #stewedtofu #pork #bonitobroth #soysause #mirin #ホシサン #川名 (経堂)
