Easy One Pan Creamy Lemon Caper Butter Salmon
"The fried and steamed fish fillets are a tasty enough anchor for the sandwich, by turns crisp and soft and flaky, punctuated by the mild bitterness of the asparagus or the sweetness of shrimp, the crisp cucumber, the briny burst of the roe." Danish Stjerneskud

Did anyone try to toast the rye bread like me? 😂
The perfect start to our rainy day was breakfast at Lagkagehuset. This gorgeous bakery is famous for its danishes which we accompanied with a Belgian hot chocolate. It was then time for a stroll down to the waterfront to catch a glimpse of the Little Mermaid statue. This statue was built to honour Hans Christian Anderson’s original story of the Little Mermaid, long before Disney made it into an animation.
The palace tour continued at Amalienborg. This location consists of four palaces facing an inner courtyard. One has been converted into a museum to display the artefacts and tell the stories of Denmark’s royal family. It was a very interesting insight into the history of not only the royal family, but also Denmark itself. The jewellery, furniture and art was breathtaking! Not too long after we finished browsing the museum we watched the changing of the guard. It was a very lively performance with the soldiers playing in a full marching band. Very impressive.
The remainder of our day was focused on eating. We visited the popular glass halls, Torvehallerne, which house a variety of market and fresh food stalls. We finally had the opportunity to sample smorrebrod, a traditional Danish open sandwich. It is usually prepared topped with pickling herring on too of rye bread, but we tried some modern twists. Egg and truffle on one piece of toast, and roast chicken with smoked cheese on another. Yum yum! We wish we could have these in Australia. They were amazing.
Then it was on to other foods in the hall- tapas with Serrano ham and manchego cheese; elderflower lemonade; poppyseed pastries called ‘tebirkes’; mixed berry tart and lemon meringue tart; and finally some takeaway danishes for tomorrow’s breakfast.
What a way to end our time in Copenhagen. The food was amazing and there were so many beautiful historical sights to see. Next stop is Prague.
